Vitamins are non-caloric, organic nutrients that are needed in very small amounts
(hence they are micronutrients), but are essential to health and body function.
Without vitamins, all the energy-supplying carbs, lipids, and proteins we take in would
do us little good. Every child knows about vitamins, because most of them are given
a gummy bear or Flintstone character to chew on every day. Food labels display
percentages of every letter in the vitamin alphabet, and vitamin supplements and
vitamin-rich beauty products contribute billions of advertising dollars to the economy.
Any product that puts "contains vitamin X Y or Z" on the package flies off the shelves,
because we are never really sure that we're getting enough vitamins in our food.
